Steamed fresh long squash dumplings (dudhi na Muthiya) & a hor steaming cup of Indian spices tea (masala chai) for Saturday brunch at Patels kitchen! Muthiya (normally it is made of dudhi or methi) is a very popular Gujarati reciepe which can be served as a breakfast, snack, lunch or dinner. My mom who is pro in cooking Gujarati dishes made these by adding blending soaked split husked Bengal gram, rice semolina, shredded long squash, yogurt, ginger paste, garlic paste, green chilli spices n salt to taste. The mixure is shaped/gripped using a small fist and then steamed (It’s named after the way it’s made with the “gripping” action of the fist – “muthi” in Gujarati). The steamed pieces are cut in bite size and tempered with oil, cumin mustard n sesame seeds, curry leaves, asafoetida & lots of finely chopped fresh garlic.Carrot sticks, garlic seasoned Bugatti toasts, jalapeno peppers flavored kettle cooked chips, multigrain tortilla corn chips, sriracha peanuts and roasted garlic pinenuts hummas for Saturday starters with friends and family at Patels kitchen!Red kidney beans curry (Rajmah), fresh cut chicken bite size cubes in spicy pickling spice onion tomato yogur gravy (achari chicken curry), fresh cottage cheese in onion tomato pickling spice n sun dried fenugreek leaves in mustard oil gravy (achari paneer) & steamed long grain basmati rice (chawal).ready for Saturday dinner at Patels kitchen!Steamed long grain rice (chawal), pearl size chick peas flour deep fried water soaked balls in spiced yogurt sauce (boondi raita), picking spice chicken gravy (achari chicken), pickling spice cottage cheese gravy (achari paneer), tangy mango pickle (aam achar), radish cucumber onion beet pomegranate salad, red kidney beans spicy curry (rajmah) & all purpose flour clay oven roasted flat bread (naan bread) & roasted sundried urad lentil black pepper flavoured flats (papad) for Saturday dinner at Patels kitchen with friends n family!!
